nepalese curry

Gurkha curry (Nepalese curry) is probably eaten by Yaks, Yetis and sherpas too. Made famous by the military style curries (which are usually very hot) this sauce has all the same kinds of spices and flavours but with a milder heat. You will find fenugreek, cardamom and ajwain seeds in the sauce, as well as our own blend of Nepalase Garam Masala. The military style curries were also known for being used to curry any cut of meat or offal as well as with scrambled eggs and veg. We've tried this with all kinds of meat, fish and veg and can definitely say it is versatile enough for anything. Our absolute favourite though, has to be with crispy pork belly - see recipe below (with comical spelling).
